The Breville – PolyScience Control Freak Induction Cooker Gets Temperature Right

You may not think about this much if you’re not really into cooking, but getting the temperature exactly right with the foods you cook can make a huge difference with how they turn out. That’s why sous-vide cooking is becoming increasingly popular (read our Nomiku Immersion Cooker review here), but there are some foods that you just can’t cook that way. Perfectly poached eggs, for instance. The Control Freak is an induction cooker with precise temperature control, allowing you to poach, blanch, boil, or broil with perfect accuracy every time. A collaboration between PolyScience and Breville, the cooker uses two sensors to make sure things are set just right: there’s a through-the-glass IR sensor, and a clip-on Probe Control module. With these two, you can change settings between 86° and 482° F (30° and 250°C), with a one degree of precision. There’s even an Intensity Setting that makes it possible to decide how quickly things heat up. Of course, this kind of device doesn’t come cheap: you’ll have to part with $1,800 to get yours.
